March means citrus here in Arizona. We all have loads of oranges, lemons and grapefruits and not enough time to use them! This citrus poppyseed bread is delicious and so fun to make this time of year. The kiddos obviously love it! Enjoy.
Ingredients
• 3 cups flour
• 3 cups granulated sugar (divided)
• 1 1/2 teaspoon baking powder
• 1 1/2 teaspoon salt
• 3 eggs
• 1 1/2 cups milk
• 1 1/3 cup vegetable oil
• 1 1/2 tablespoon poppyseeds
• 2 teaspoons vanilla extract (divided)
• 2 teaspoons butter flavor extract (divided) *optional
• 2 teaspoons lemon OR almond extract
• (divided)
• 1/4 cup orange juice
Directions
1. Preheat oven to 350°
2. In large bowl, combine flour, 2 1/4 cups sugar, baking powder & salt.
3. Beat in oil, egg, milk, poppyseeds, 1 1/2 teaspoon lemon/almond extract, 1 1/2 teaspoons vanilla extract, 1 1/2 teaspoons butter flavor extract, and mix on low speed for 2 minutes.
4. Lightly grease 2 full-sized loaf pans. Bake for 45-60 minutes or until toothpick in center comes out clean.
5. While loaves are baking, mix together orange juice, 3/4 cups sugar, 1/2 teaspoon each of vanilla, butter, lemon or almond extracts. Butter extract can be hard to find. It's still incredible without it!
6. As soon as loaves come out of oven, poke holes in bread with fork and pour glaze over top.
