Big Mac Tacos (a.k.a. smash burger tacos)



These big mac tacos are insane! Laura and her husband made them after hearing about them from a friend and were blown away. Kid and crowd approved, too. We recommend doubling the recipe at the least as it can all be pulled out and made for leftovers. If cooking for a crowd, pull out 2 skillets (cast iron if you have it) so you can make multiple at a time. Set up a buffet where guests can "dress" their own tacos and eat as they wish! A larger flat top griddle would also be useful here. Enjoy!


Ingredients


• 1 lb. ground beef (I like 80/20 divided into 4 (4 oz) patties

• Four, 6 inch flour tortillas (the small ones are key as you don't want the "burgers" too big)

• 1 tsp salt

• 1/2 tsp black pepper

• 4 slices American Cheese (yes, it must be American)

• 1/4 cup big mac sauce

• 3/4 cup shredded lettuce

• 3 tablespoons minced white onion

• 12 dill pickle slices


For the Big Mac Sauce


• 1/2 cup Mayonnaise

• 1 1/2 tablespoons Dijon Mustard or yellow mustard (we use yellow mustard)

• 1 tsp White Vinegar

• 2 tablespoons Grated White Onion

• 2 tablespoons Sweet Pickle Relish (yes, you need sweet)

• 1/2 tsp Kosher Salt

• 1/2 tsp Paprika

• 1/2 tsp Garlic Powder

• 1/2 tsp Onion Powder



Instructions


For the Big Mac Sauce:


1. In a small mixing bowl, whisk together all the sauce ingredients. Transfer to a glass container to refrigerate until ready to use. Can be made ahead of time.


For the burgers:


1. On a clean work surface, spread the 4 ounce burger patties evenly over the flour tortillas until almost completely covered. Season each pattie with salt and pepper.


2. Heat a large cast iron skillet over medium high heat until lightly smoking. Add one or two patties meat side down and lightly press onto the skillet. Cook for 2-3 minutes, flip add a cheese slice and cook for another 1 or 2 minutes. The burgers are thin and won't take long. Repeat with remaining burger patties.


3. To dress the burger tacos, drizzle on 1-2 tablespoons of the big mac sauce, add the lettuce, onion and 3 pickles. Serve immediately.
